HOW TO CREATE A CHEF'S KITCHEN AT HOME

With interest in the culinary arts on the upswing, more consumers are asking how they can create a chef’s kitchen at home. GRAFF posed the question to Michelin star and award-winning chef Shaun Hergatt, known for his exquisitely flavorful dishes prepared with enticing artistry and technical precision. Hergatt’s restaurants include the acclaimed Vestry in New York City’s SoHo and Caviar Bar in Resorts World Las Vegas. He also helms the culinary program and FNB for the private restaurant at New York’s 432 Park Avenue residential skyscraper.
Hergatt outlines the essentials for creating a chef’s kitchen at home: “Without the right tools, you can't make anything. You want the kitchen to be functional. Refrigeration space is something people don't consider. You may be able to cook, but you still have to store. Where do you keep things in between? That is something many people forget.”

In Hergatt’s home kitchen, ample workspace is essential, including countertops and refrigeration space. And, he adds, “Having an oven and stove top that's perfectly functional and that you know how to use is key.”

For those interested in cooking dishes from a wide range of cultures, Hergatt notes, “Culturally everyone has their own equipment. The ethnicity and type of food you are cooking makes a difference. If you are cooking Thai food, you need a specific wok. If you are making sushi-grade fish, you need a specific knife. If you are making Persian rice, you need a special pan.”
When it comes to hosting, say Hergatt, space should be the first consideration. And, he adds, “You want someone to plan the event, regardless of how big or small it is. You want a good flow, and without that, regardless of food or venue, it won't be perfect.”
In addition to food preparation and cooking, a chef’s kitchen must also take cleaning into account. Hergatt emphasizes that it’s important for him to have a kitchen faucet with a hose that can be extended for easy cleaning.
